SITSS00051 Food Safety Supervision Skill Set
This Skill Set is to equip individuals in hygienic practices and handling food safely during the storage, preparation, display, service, and disposal of food.
The units that this skill set covers are:
Target Group
This skill set is for food handling personnel or food safety supervisors working in tourism, hospitality and catering organisations with permanent or temporary kitchen premises, and smaller food preparation or bar areas.
Existing Skills and Knowledge
There are not formal entry requirements into this skill set. Candidates are required to have the following skills and knowledge prior to enrolment:
Pathways
Achievement of this unit provides credit towards qualifications in tourism, travel, hospitality, events, holiday parks and resorts in the SIT Tourism, Travel and Hospitality Training Package.
Mode of Delivery
Classroom – All training will be delivered face to face within a classroom environment, or within your workplace if you have a small group of staff that can come together.
Self-Paced – Students will be required to undertake activities outside of the classroom environment such pre-reading and pre-course workbook which is a part of the course requirements.
Assessment Methods
A range of observation techniques have been included, as well as short answer questions and a written project completed individually by each candidate and guided by our qualified assessor. Access to a hospitality environment is required, where specific equipment is available. Information on this equipment list is provided prior to enrolment, to ensure it is available.

Licensing / Regulatory Requirements
Certification requirements apply at a state and territory level to individuals involved in food handling or supervision. Certification in some States relies on the achievement of SITXFSA001 Use hygienic practices for food safety and SITXFSA002 Participate in safe food handling practices.

Recognition of Prior Learning (RPL):
All students are eligible to apply for Recognition of Prior Learning and are advised of this on the back of the Enrolment Form and on the course flyer, also refer to the Student Handbook for the policy and procedure on the process for RPL.
